Barbecue Must-Have

Another one of my favorite pasta dishes is this easy, yummy and fresh pasta salad. This is quick to make and great to take when you need a dish for to a family gathering, a friend who asked for a quick and easy recipe, and is always great for a barbecue.

Fresh Ingredients

As far as cucumbers go, I like to use English cucumbers. I prefer the taste, and they’re less work than a regular cucumber when it comes to the seeds as they are smaller.

I also use hard salami because I think it holds up better, especially if you make it the night before which gives it more flavor since everything had time to merge together. If you make it and eat it right away — which seems like what we usually do — it still taste great.

As far as onions go, I prefer a sweeter onion. I buy Italian dressing already made, but if you are someone who makes your own, that’s great too! I did put a green pepper in it this time, which is something my son usually likes, but no one cared about it so much this time. So, I don’t think this is an ingredient that I will worry about making sure I have on hand, though.

This easy pasta salad is great for a last minute dish when you forgot about a party you are suppose to be at in about an hour with a side dish (which has happened more than once sad to say) or for a picnic.

Instructions
  1. Bring water to a full boil and add salt and pasta. Cook al dente about 8minutes. Drain well and run cold water over the pasta to stop the cooking process.
  2. While the pasta is cooking start slicing up your veggies.
  3. Put pasta in a large bowl. If I have time I will put the pasta in the refrigerator to cool down and then add 1/2 the veggies and 1/2 the dressing and a little bit of salt and pepper ( we will also put some on the top) and toss. Then add the rest of the veggies and the rest of the dressing and the rest of your salt and pepper and toss until well combined. Place in the fridge until ready to go or eat right away. It doesn’t get much easier, quicker or don’t forget tastier than that!
  4. Now you can sit back and relax till it’s time to go and enjoy the party! Jeanne

I have been making this quick dessert for over 25 years thanks to my good friend Debbie. We used to play Bunco and it was my turn to host and kind of forgot until the last-minute. So I needed a quick dessert and this was the one she shared with me. It could not be me easy or quicker and who doesn’t love chocolate plus Hostess Ding Dong’s.

Instructions
  1. Crumble all of the box of ding dongs and set about a half a cup aside for the top. In the bottom of a 8x10 dish put the crumbled ding dong. Add the chocolate pudding on top and then the whipped topping. Sprinkle the remaking ding dongs on top and cover and refrigerate until ready to serve.
  2. I could not of asked for a cuter helper. She loves to help me bake and even loves to help do dishes!

Strawberry Shortcake

Who can resist fresh strawberries, especially when topped with Cool Whip or fresh whipped cream? Not me!

Strawberries are, without a doubt, my favorite fruit, and they always have been. One of my favorite things to do is to go strawberry picking. It has been so long since the last time I went, and every year I keep saying I’m going to go, but then something always seems to comes up. Regardless, whenever I need some, I head out to the store looking for the best strawberries. The brand I usually buy is Driscoll since they have the biggest which are great for dipping in chocolate; sweetest and just all around the best.

I  always try to keep a pound cake, frozen fruit, and Cool Whip in the freezer at all times, and of course, ice cream. We have that all year round, and any flavor you like will work; strawberry ice cream with chocolate sauce on top would be an excellent choice. I think I’ll try that one next when I get the opportunity.

This makes for a quick dessert! All you have to do is thaw the fruit and tub of Cool Whip in a bowl of cool water. Then just make sure to keep the tub sealed and the fruit in the bag. Leave the pound cake on the counter for about 30 minutes, or a little longer as needed. Then follow the directions on the box.
